Green is Delicious
We enjoyed this refreshing, bright smoothie over breakfast Saturday morning. It was a nice change of pace from our weekly routine of yogurt, sliced banana and granola. Not to mention, eating spinach for breakfast leaves you feeling like Popeye – ready to surmount any obstacles that come your way!
½ cup frozen spinach
½ cup plain yogurt
½ cup water
1 banana, frozen (Note: The night before I sliced the banana, wrapped it in plastic wrap and stuck it in the freezer. The sliced banana is easier for our blender to handle.)
1 tsp. ginger, freshly grated
1 Tbsp. fresh mint leaves, chopped
Hearty squeeze of lime juice
Place all the ingredients in your blender and whirl away until it’s nicely mixed. If you prefer a thinner, more liquid smoothie, add more water and don’t freeze the banana.
