Happy Monday! If you are anything like me, you secretly (or not so secretly, since I’ve just outed myself) enjoy seeing pictorials of what other people eat during the day. It satisfies my inner voyeur, and it often gives me good ideas for food combos that I might like but have never tried. So when you glance through this post, I hope you get inspired and enjoy a peak into what my day looks like, but please don’t feel that this is how you should eat (we all have different nutritional needs) or that this is how I eat day in and day out (I love variety!).
So without further ado, here is what a recent Monday looked like for me from a culinary stand-point:
Priorities! Forget what I said about needing variety – I am lost without my French press coffee every morning.
Alberto calls it disgusting, I call it delicious: 1/2 cup of old fashioned oats, 1/2 cut of water, pinch of cinnamon. Microwave it for 2 min. then add a couple hefty spoonfuls of plain yogurt and a sliced banana. That is good breakfast eating if you ask me! :)
Lunch break! It’s peach season, so I had a salad of romaine, homegrown cuke, carrot, peach, lentil and a little chicken, and topped it all off with a homemade vinaigrette. Over to the side you can see a whole wheat muffin with a tiny smear of PB and a couple peach slices – hit the spot!
Post-lunch banana snack. This one was on its last leg so both my hunger pangs and the discoloration of the peel convinced me I’d better finish it off! ;)
