Who cares if it’s snowing outside? It’s still Spring! In defiance of the unseasonably chilly weather, I wanted to share a recipe inspired by the Easter season. Like most smoothie recipes, this one is very easy to prepare. The carrot gives it a gorgeous orange hue, it’s full of vitamins AND it’s a great way to use up leftovers! Unlike most of the carrot smoothie recipes out there, this one relies on whole carrots and not just their juice, so it’s not only nutrient-dense but contains plenty of fiber as well. I hope you enjoy it as much as we did! The recipe below made enough for two sizeable smoothies.
1 large carrot, steamed and diced (Note: We had steamed carrot leftover from earlier in the week, and this was the perfect way to use it up!)
1/2 cup of pineapple, diced
1/4 cup of pineapple juice
1 Tbsp. of fresh ginger, minced
1/4 cup of plain yogurt
Juice from half a lime
1/4 cup of water
1 tsp. vanilla
Throw everything into your blender and blend it until it’s smooth. I prefer a smoothie with a thicker consistency, but if you like yours a little less so, just add a touch more pineapple juice or water. Also, I used canned pineapple packed in its own juice, but if fresh pineapple is available to you, the flavor would be out of this world.
